Rhonda’s Meatloaf

“Rhonda’s Meatloaf” as it is known in our family is a favourite! As fall sets in it is a great meal with a favourite green salad and a steamed vegetable like broccoli. I hope your family enjoys “Rhonda’s Meatloaf” as much as my family does!


· 2 eggs, mixed lightly

· 2/3 c milk or non dairy alternative

· ¼ tsp pepper

· ½ tsp salt

· ½ c bread crumbs or gluten free bread crumbs

· 1 onion, chopped

· ½ c shredded carrots

· 1 c shredded cheddar cheese or lactose free or non dairy alternative

· 1 ½ lbs ground bison or lean or extra lean ground beef

· ¼ c brown sugar

· 1 tbsp prepared mustard


1. Prepare 9×5 loaf pan with non stick spray

2. Preheat oven to 350

3. Combine eggs, milk, salt, pepper and bread

4. Mix until the bread crumbs have disintegrated

5. Add onion, carrots, cheese, and ground meat

6. Mix well

7. Add meat mixture to loaf pan

8. Combine brown sugar, ketchup and mustard and spread over loaf

9. Bake at 350 for one hour
