Easy Avocado Pasta

I tested this recipe out when my son was being a picky eater and needed some new ideas. Not only is it easy but it’s so delicious that it has become a family staple, husband and toddler approved!

INGREDIENTS:

  • 2 ripe avocados, halved, seeded and peeled (unripe and the sauce will be lumpy)

  • 1/2 cup fresh basil leaves

  • 2 cloves garlic (I use Red Russian Garlic)

  • 2 tablespoons of lemon juice

  • Kosher salt and freshly ground black pepper, to taste

  • 1/3 cup olive oil

DIRECTIONS:

  1. Cook your choice of pasta according to package instructions; drain well.

  2. To make the avocado sauce, combine avocados, basil, garlic olive oil and lemon juice in the bowl of a food processor; season with salt and pepper, to taste. Mix till nice and smooth.

  3. In a large bowl, combine pasta, avocado sauce, garnish with cherry tomatoes and/or corn.

  4. Enjoy!

Note: You can keep leftovers in the fridge, just keep in mind the avocado will brown
